Makes about 2 oven sized trays of cookies, about 150 depending on the size of your cutter.

  1. Beat the egg whites until they can hold stiff peaks
  2. Fold in 250g of icing sugar, the vanilla and cinnamon (lots)
  3. Fold in the ground almond until it is a rollable dough
  4. Roll out on icing sugar to desired thickness
  5. Cut into your favourite shapes
  6. Bake at 140C in a convection mode oven until they start to crisp (but remain soft), about 25 minutes
  7. Once cool glaze with an icing made of lemon juice and icing sugar
