Makes about 2 oven sized trays of cookies, about 150 depending on the size of your cutter.
Ingredients
- Whites of 3 eggs
- About 500g Ground Almond
- Lots of Icing sugar
- An excess of Cinnamon
- An Lemon
- Vanilla flavour
Algorithm
- Beat the egg whites until they can hold stiff peaks
- Fold in 250g of icing sugar, the vanilla and cinnamon (lots)
- Fold in the ground almond until it is a rollable dough
- Roll out on icing sugar to desired thickness
- Cut into your favourite shapes
- Bake at 140C in a convection mode oven until they start to crisp (but remain soft), about 25 minutes
- Once cool glaze with an icing made of lemon juice and icing sugar
